We are new in Tennessee and we are not going to pretend otherwise. What is not new is the work behind us.
The short version
BBQ Tennessee comes out of BBQ Québec: three stores, a team of thirty-five, and hundreds of custom outdoor kitchens built in a province that spends five months a year under snow.
That is a strange qualification for Tennessee, and it is the whole point. A build that has to survive freeze-thaw, road salt and a forty-degree swing teaches you very quickly which materials are honest and which ones are a finish over a compromise.
Tennessee punishes the same shortcuts, differently — a spring storm season instead of a long freeze, and humidity that never really leaves. The discipline transfers directly. The supplier list, the stone and the steel specification did not, so those were rebuilt from nothing for this market.
